Hello Readers and Happy Fall!

This is my favorite time of year. So much to love about fall—the way the nights turn crisp, light takes on a golden hue, trees and shrubs put on fancy dress in splendid jewel tones, socks and sweaters come out of moth balls, pumpkin spice is back on the menu, and, all the apples! I have a great Country Apple Pie recipe that I’ve made since the late 1970s . . . it’s embedded in my first novel, Eliza Waite and listed below. Hope you enjoy!

BIG NEWS! The Irish Girl is off to the printer . . . and is already available for preorder at your favorite bookstore or online, launching December 10, 2024, just in time for holiday shopping. In Closing
With so much sadness in the news and unease about the upcoming election, I turn to simple comforts this month: a cup of coffee, a warm blanket, a crackling fire, scented candles, a good book, and, of course, apple pie

Country Apple Pie Recipe

Line uncooked pie shell with five to seven apples, peeled and thinly sliced. Mix ¾ c. sugar, four tablespoons flour, ½ teaspoon each cinnamon and nutmeg, and pinch of salt. Add 1 c. heavy cream to mixture and pour over apples. Dot with butter. Top with crust dusted with sugar and bake for 50 minutes or until bubbly.
